Simple Recipes: Oven Scramble

When you have eggs and some leftover vegetables or meat, you can whip up a tasty oven scramble which is great for breakfast or anytime. 
Preheat oven to 400 degrees. While the oven is heating, allow 2-3 tablespoons of butter to melt in your baking dish. I used an 8 x 8 Pyrex dish. I prefer glass for cooking egg dishes, but a nonstick metal pan will work too.
Scramble four eggs and a small amount of milk with a whisk. I used buttermilk. You could also use non-dairy milk such as almond or soy if it is an unsweetened variety.
I had a leftover baked potato and half an onion. Once the butter was melted, I chopped the potato and onion into the pan and topped with a bunch of shredded cheese. I then poured the egg mixture over the vegetables, topped it with another tablespoon of butter, and baked it for 20 minutes.
This dish is great served with biscuits and jam such as Smuckers Simply Fruit.
